Boston Cream Pie Cake
O.K... so this is the cake I made before my visit to Houston and MD Anderson Cancer Center.... full weekend of mind-occupying fun..... paddle boarded on Town Lake through downtown Austin and stopped to watch the famous bats fly in the night-time sky... 2 million of them... pretty amazing. As for the cake, not my fave.... good... but not my fave. But another recipe from the book under my belt and on to the next.

Sunday Night Cake and 9-inch Pan
I decided to make a big move, change some things. Cancer puts you in that frame of mind. So about 7 weeks ago I moved from Long Beach, California to Austin, Texas. I wanted to be near family and also be near a really great hospital. So.... i gave everything away except for what would fit in my car and made the 3-day journey. What did I pack in my trunk? My cookbooks, my cooking gear, my motorcycle gear, clothes, photos, and my computer ( I work from home). It is amazing how much freedom I felt. I gave away everything else.... to my walking partner, my poker buddies, friends in general who immediately called "dibs" on things.... it felt good. I have lots of cooking paraphernalia.... but alas...no 9-inch square pan. Now, I need things....I am ever the optimist and saving $ for a little studio (currently living with brother) but what do I spend my $$$ on? What gives me joy.... buying a 9-inch pan, some really great chocolate, expensive vanilla to bake my Sunday Night Cake. Cliche and cheesy... but it's the little things. And the cake was probably the best-tasting cake I have ever made.

Being a cancer patient, stress is not my friend. Few things relieve my anxiety and bring me to a Zen-like state like baking. Slapping on my IPad Shuffle with some of my favorite music, I get lost in the recipe. Taking the time to make sure that I really experience every part of the process.... shopping, measuring, mixing, baking, tasting and then my favorite part..... sharing. Baking my way through a cookbook has been on my "bucket" list (though I hesitate to use the term "bucket" list... bad Karma)... for a long time. Done the skydiving, ziplining, marathoning, etc, etc.... a rush for sure. I was told recently that leaving a legacy is important if indeed things take a turn for the worse....my children and grandchildren are paying attention on how I handle things from hear on out. Seems kinda silly I know...but baking centers me thus ultimately helping me to make better day-to-day choices.
